I have to cook this up again!
Sunrise Chicken
This is a very special dish with unique flavors that is simple to make, I made it for my Daughter's 16th birthday party. She invited her French teacher and the teacher visiting from Morocco for her special day.
4 boneless skinless chicken breast halves
1 tablespoon canola oil
salt
fresh ground pepper
2 teaspoons fresh, grated ginger
1 cup orange juice
1/2 cup dry white wine
1 teaspoon lime juice
1/2 teaspoon Dijon mustard
1 teaspoon maple syrup
1/2 teaspoon thyme
1/4 teaspoon coriander
1 (15.00 ounces) can sweet potatoes, drained
1/3 cup slivered almonds
1 cup dates

1. Heat oil in large skillet over moderate heat.
2. Season chicken with salt and fresh-ground pepper.
3. When oil is hot, add chicken, cooking till light brown on both sides.
4. Add the ginger, orange juice, wine, lime juice, mustard, maple syrup, thyme, and coriander.
5. Stir, blending.
6. Add sweet potatoes.
7. Simmer for 10 minutes.
8. Remove from heat and add almonds and dates.
I tried to keep it somewhat Moroccan for Amina and invited Larissa's friends also to partake. It was a very enjoyable time for everyone. I was so very pleased with how her friends tried everything plus came back for seconds.
